SYR: Building my kitchen arsenal (knives)

I’m not claiming to be a master chef, at least not just yet. But in an effort to piece together kitchen equipment for my place I started doing some research. Last week I was at Barnes and Noble flipping through one of Anthony Bourdain’s book (the guy who hosts the television program, No Reservations, on The Travel Channel. Bourdain made an interesting point about “how many knives are really necessary” in the kitchen.
His answer, two. An 8-Inch Chef’s Knife and something small like a 3 1/4-Inch Paring Knife. After completing my due diligence I found that R.H. Forschner by Victorinox 8-Inch Chef’s Knife (item # 40520) and it’s little brother, 3 1/4-Inch Paring Knife (item # 40600), was a good place to start.
Now, I enjoy supporting the local guy so after some research I found a place in Syracuse that carried them AND was competitively priced.
